Stuffed onions
Posted in : Appetisers, Use of leftovers on by : Maya Tags: feta, red onions, ricottaI had some leftover cheese mix from the aubergine roll-ups and wasn’t sure what to do with it. I found a few red onions, married them together and it was a real treat! The onions carmelised a bit and worked so well with the salty and minty stuffing!
The biggest challenge was to empty the onions to make them into bowls, but in the end it turned out to be pretty easy. I used apple core cutter, but you can also make it work with a small knife. It’s easy.
And then don’t forget to place some mint leaves on the top, it makes the onion look so much better!
Ingredients
- A few red onions
- Leftover stuffing from aubergine-roll-ups
- Olive oil
- Fresh mint
Instructions
- Peel the onions and carefully remove the center in order to make them into bowls.
- Sprinkle some olive oil all over them and place them in a hot oven (180°) for around 20 minutes.
- Remove from oven and stuff with the cheese mixture.
- Place in the oven again for around 15 minutes.
- Add some mint leaves on top and serve.
