Raspberry muffins with lemon scent

I love lemon, and I pretty much think it makes (almost) any dish better. Just like bacon. Lemon and bacon as the scotch tape of the culinary world. There will be lots of both on my blog.
Ingredients
- 200g sugar
- 200 g flour
- 50g almond flour
- 1 packet yeast
- 2 eggs
- 50 ml milk
- 150 ml olive oil
- Zest of 1 lemon
- 30g sliced almonds
- 125 raspberries, frozen
Instructions
- Heat the oven to 180°C
- Mix together sugar, flour, almond flour and yeast
- In a separate bowl mix the eggs, milk, olive oil and lemon zest
- Mix it all together with a rubber spatula, then add the raspberries (don’t take them out of the freezer until the moment when you are about to fold them in.
- Bake for around 30 minutes
