Chewy lemon cookies

It’s summer but I am in cookies’ mode. But because it’s summer then they need to be summery too! Those are great, creamy and lemony and sweet. A perfect tea-time treat, not only for the summer!

It’s not as difficult as it seems. Making meringues is really easy, provided you look out for the temperature of the oven. And the sorbet doesn’t require the an ice-cream machine! And it’s very refreshing, so really a perfect, summer dessert!

It was the idea of the pineapple flowers that tempted me. Plus I like pineapple, so it’s a good mix. I modified a bit Nigella’s recipe for the pineapple upside down cake. Cherries didn’t fit into the muffin tins at all, so they go replaced with blueberries and it turned out pretty good too.
