Asparagus lime soup
Posted in : Appetisers, Soup on by : MayaThe season for asparagus is not very long, so when it is on, I usually end up with a bundle after every grocery shopping. Here is another recipe, simple and allowing to enjoy the freshness of this wonderful vegetable (is it a vegetable actually?).
Ingredients
- 1 bundle asparagus
- 500 ml chicken stock
- juice from half a lime
- 2 tbs olive oil
- sour cream
- freshly ground pepper
Instructions
- Chop the asparagus into 1-2 cm chunks
- Cook in the chicken stock for around 20 minutes, until soft.
- Blend it with an immersion blender (be careful when blending hot liquids!)
- Add olive oil and lime juice.
- Pour into bowls and add pepper and a large spoonful of sour cream to each bowl.
- Serve with grilled cheese sandwich chunks.
