What to do with 2 zucchinis?

Getting home-garden-grown vegetables and fruit is I think the best present for me. I always find it amazing what wonderful stuff grows in home gardens. I have this dream of having a real garden myself one day. I would have to move to a more sunny place because I would love to have lemon trees…
Anyway, I had those 2 beautiful zucchinis, and I was wondering what to with them? Zucchinis have little taste, but on the other hand, there is so many possibilities of using them. They can go into a sauce, you can stuff them, make chips…
In the end I went for baked parmesan zucchini sticks and zucchini-cashew roll ups (which are in fact vegan! a change to most of my dishes which usually have some kind of cheese…). Both turned up really good, especially for someone who likes zucchini like me! And don’t be skeptical about the cashews, soaked in water they become soft and mixed turn out into a cheese paste.
Ingredients
For baked zucchini
- 1 big zucchini
- olive oil
- parmesan
- dried basil
- salt
- chili pepper
For cashew zucchini roll-ups
- 1 large zucchini
- 150g cashews
- olive oil
- a few dried tomatoes
- fresh coriander
- lemon zest
- salt, fresh ground pepper
Instructions
Baked zucchini
- Cut the zucchini in long sticks
- Place the sticks on a baking pan covered with baking paper
- Sprinkle lots of spices on them
- Place in an a hot oven (200°C) for around 30 minutes.
- Then sprinkle parmesan on them and bake for another 5-10 minutes.
Cashew-zucchini roll-ups
- Place the cashews in a bowl and cover with water. Let them soak for at least 4 hours, preferably whole night.
- Cut the zucchini into long slices.
- Fry them on a pan. Spice them with salt and pepper.
- Remove the water and place the cashews in a blender. Blend them well.
- Place the cashews in a bowl, add some olive oil, salt, pepper, lemon zest, chopped coriander and chopped dried tomato.
- Place a little bit of cashew paste on each zucchini slice, roll it up and hold it with a tooth pick with a sick with a piece of dried tomato on top.
Serve as appetizer, or add lettuce and fresh bread and make it into a full dish.
